Hot Honey Butter Corn Ribs

Description

A spicy-sweet twist on classic corn ribs, featuring charred corn slathered in a hot honey butter sauce. Perfect for summer BBQs or as a bold side dish.

For the Crust:

  • For the corn ribs:
  • 4 ears fresh corn, halved lengthwise
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • For the hot honey butter:
  • 1/4 cup unsalted butter, melted
  • 2 tbsp honey
  • 1 tbsp hot sauce (like Frank’s RedHot)
  • 1/2 tsp chili flakes
  • For garnish:
  • 1/4 cup crumbled feta cheese
  • 2 tbsp chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

1. Prepare the Crust:

  1. 1. Preheat grill or grill pan to medium-high heat (400°F).
  2. 2. Brush corn ribs with olive oil and sprinkle with smoked paprika, garlic powder, salt, and pepper.
  3. 3. Grill corn cut-side down for 5-7 minutes until charred, then flip and grill 3 more minutes.
  4. 4. Whisk together melted butter, honey, hot sauce, and chili flakes in a bowl.
  5. 5. Transfer grilled corn to serving platter and immediately brush with hot honey butter.
  6. 6. Garnish with feta, cilantro, and serve with lime wedges.

Notes

For extra spice: Add 1/4 tsp cayenne to the butter mixture. For vegetarian version: Omit feta or use vegan alternative. Corn can be roasted at 425°F for 20 mins if grilling isn’t possible.
