For the Crust:
- 1 lb boneless, skinless chicken thighs
- 1/4 cup honey
- 2 tbsp hot sauce
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 cups cooked rice
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup sliced cucumber
- 1/4 cup chopped cilantro
Instructions
1. Prepare the Crust:
- In a bowl, mix honey, hot sauce, garlic powder, paprika, salt, and pepper.
- Add chicken thighs to the bowl and coat evenly. Let marinate for 10 minutes.
- Heat olive oil in a skillet over medium-high heat. Add chicken and cook for 6-7 minutes per side until fully cooked.
- Remove chicken from skillet and let rest for 5 minutes before slicing.
- Assemble bowls with cooked rice, sliced chicken, avocado, cherry tomatoes, cucumber, and cilantro.
- Drizzle with extra hot honey sauce if desired.
