Description

A festive salad bowl featuring fresh greens, grains, and lucky symbols, perfect for holiday gatherings.


Ingredients

  • 2 cups mixed greens
  • 1 cup cooked quinoa
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, sliced
  • 1 avocado, diced
  • 1/4 cup feta cheese, crumbled
  • Dressing: 2 tablespoons olive oil, 1 tablespoon lemon juice, salt and pepper to taste

Instructions

  1. Wash and dry the mixed greens, then place them in a large bowl.
  2. Add the cooked quinoa, cherry tomatoes, red onion, avocado, and feta cheese to the bowl.
  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.
