- 1 ½pounds ground beef
- 1onion, minced
- 4carrots, minced
- 3celery ribs, thinly sliced
- ½ cupbarley
- 3(10 ounce) cans beef broth
- 1(28 ounce) can diced tomatoes
- 2 cupswater
- 1(10.5 ounce) can condensed tomato soup
- 1bay leaf
- 1 tablespoonparsley
- 1 teaspoonminced garlic
- ½ teaspoondried thyme
Instructions
- In alarge pot, brown the ground beef over medium-high heat. Drain and set aside.
- In the same pot, sauté the onion, carrots, and celery until tender.
- Return the beef to the pot, adding barley, beef broth, diced tomatoes, water, and tomato soup. Stir well.
- Mix in the bay leaf, parsley, garlic, thyme, and black pepper. Bring to a boil, then simmer for about 1 hour.
- Remove the bay leaf before serving. Season with additional salt and pepper if needed.
Notes
For a lighter version, substitute ground beef with ground turkey or chicken.To make it vegetarian, omit the meat and use vegetable broth, adding more veggies like bell peppers and zucchini.Great for freezing; store in airtight containers and reheat for a quick meal.
