Ingredients

Scale
  • 2 lbs beef chuck, cut into cubes
  • 4 potatoes, peeled and quartered
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • For the mash:
  • Milk
  • Butter

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Brown the beef cubes on all sides.
  3. Add onion, carrots, and garlic; cook until softened.
  4. Pour in beef broth and bring to a boil.
  5. Reduce heat, cover, and simmer for 2 hours until beef is tender.
  6. While simmering, boil potatoes until soft.
  7. Mash potatoes with milk and butter, season with salt.
  8. Serve beef over mash.

Notes

Let the stew cool before serving over mash. Add herbs like thyme for extra flavor if desired.
