Ingredients

- 2 lbs beef chuck, cut into cubes
- 4 potatoes, peeled and quartered
- 1 onion, chopped
- 2 carrots, sliced
- 2 cloves garlic, minced
- 2 cups beef broth

- For the mash:
- Milk
- Butter
Instructions
- Heat olive oil in a large pot over medium heat.
- Brown the beef cubes on all sides.
- Add onion, carrots, and garlic; cook until softened.
- Pour in beef broth and bring to a boil.
- Reduce heat, cover, and simmer for 2 hours until beef is tender.
- While simmering, boil potatoes until soft.
- Mash potatoes with milk and butter, season with salt.
- Serve beef over mash.
Notes
Let the stew cool before serving over mash. Add herbs like thyme for extra flavor if desired.
