A warm and comforting baked oatmeal packed with apples, cinnamon, and wholesome oats. Perfect for meal prep or a cozy weekend breakfast.

For the Crust:
- For the oatmeal base:
- 2 cups old-fashioned rolled oats
- 1 tsp baking powder
- 1.5 tsp ground cinnamon
- 1/4 tsp salt
- 2 cups unsweetened almond milk
- 1/4 cup pure maple syrup
- 1 large egg
- 1 tsp vanilla extract
- For the apple mixture:
- 2 medium apples, diced (about 2 cups)
- 1 tbsp lemon juice
- 1 tbsp coconut oil, melted
- 1 tsp cinnamon
- For topping (optional):
- 2 tbsp chopped walnuts
- 1 tbsp maple syrup
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and grease an 8×8 baking dish.
- In a large bowl, mix oats, baking powder, 1.5 tsp cinnamon, and salt.
- In another bowl, whisk together almond milk, maple syrup, egg, and vanilla.
- Pour wet ingredients into dry ingredients and stir until combined.
- In a separate bowl, toss diced apples with lemon juice, coconut oil, and 1 tsp cinnamon.
- Spread half the oat mixture in prepared baking dish. Top with half the apples.
- Repeat layers with remaining oats and apples.
- Bake for 35-40 minutes until set and golden.
- If using toppings, sprinkle walnuts and drizzle maple syrup in last 5 minutes of baking.
- Let cool 5 minutes before serving.
Notes
Store leftovers covered in refrigerator for up to 5 days. Reheat with a splash of milk. For vegan version, use flax egg instead of regular egg.
