This Hawaiian Chicken Sheet Pan meal is a vibrant, tropical-flavored dinner that comes together with ease. With juicy chicken, sweet pineapple, bell peppers, and savory spices, it’s an effortless, one-pan dinner that brings the flavors of the islands right to your table!


Ingredients

For the Chicken and Veggies:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium red onion, sliced
  • 1 cup fresh pineapple chunks (or canned, drained)
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp ground ginger (optional, for an extra hint of flavor)
  • 1 tbsp soy sauce
  • 1 tbsp honey (or more for sweetness)

For the Hawaiian Glaze:

 

  • 1/4 cup pineapple juice (from the pineapple chunks)
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar (or apple cider vinegar)
  • 1 tsp cornstarch mixed with 2 tbsp water (for thickening)

Instructions

1. Preheat the Oven & Prepare the Sheet Pan:

  1. Preheat the oven to 400°F (200°C).
  2. Line a sheet pan with parchment paper or lightly grease it with cooking spray.

2. Season the Chicken:

  1. Pat the chicken breasts dry with a paper towel and rub them with olive oil, salt, pepper, garlic powder, and onion powder.
  2. Place the seasoned chicken on the prepared sheet pan.

3. Prepare the Vegetables & Pineapple:

  1. Scatter the sliced bell peppers, red onion, and pineapple chunks around the chicken on the sheet pan.
  2. Drizzle soy sauce, honey, and ground ginger (if using) over the chicken and veggies.

4. Bake:

  1. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the vegetables are tender.

5. Make the Hawaiian Glaze:

  1. While the chicken is baking, in a small saucepan, combine pineapple juice, soy sauce, honey, and rice vinegar.
  2. Bring to a simmer over medium heat and cook for 2-3 minutes.
  3. Stir in the cornstarch mixture and continue simmering for another 2-3 minutes, until the sauce thickens.

6. Finish the Dish:

  1. Once the chicken is done, drizzle the Hawaiian glaze over the chicken and vegetables.
  2. Return the sheet pan to the oven for an additional 5-10 minutes, allowing the glaze to soak into the chicken and veggies.

7. Serve & Enjoy:

 

  1. Serve the Hawaiian Chicken with rice or a side of your choice, and enjoy the sweet, savory flavors in every bite!
