  1. Mix all the marinade ingredients in a bowl and whisk thoroughly. Set aside ½ of the marinade for basting and refrigerate.
  2. Pat the chicken dry, then place it in a large ziplock bag or deep bowl. Pour half of the marinade over the chicken, ensuring it’s well-coated. Let it marinate in the refrigerator for at least 20 minutes or up to 24 hours for a deeper flavor.
  3. Heat your grill to medium-high heat. Brush and clean the grill grates before placing the chicken to prevent sticking.
  4. Place the chicken on the grill, discarding the marinade in the bag. Grill for 8-10 minutes per side, turning occasionally, until the internal temperature reaches 165ºF. Baste with the reserved marinade during the last few minutes.
  5. In the last 4 minutes of grilling, place the pineapple rings on the grill until they develop a nice caramelized char.
  6. Let the chicken rest for 5 minutes before serving. Garnish with fresh cilantro and green onions, and enjoy over a bed of white rice or with a side of avocado slices.

Notes

Marinade Time: For the best flavor, marinate the chicken for at least 4 hours. Overnight marination yields the most tender and flavorful results.
