For the Crust:
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 3 potatoes, peeled and cubed
- 2 carrots, sliced
- 1 cup frozen peas
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add the onion and garlic to the pot and sauté until softened, about 3 minutes.
- Pour in the beef broth and diced tomatoes. Stir to combine.
- Add the potatoes, carrots, thyme, oregano, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for 20 minutes or until vegetables are tender.
- Stir in the frozen peas and cook for an additional 5 minutes.
- Adjust seasonings if needed and serve hot.
