For the Crust:

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 3 potatoes, peeled and cubed
  • 2 carrots, sliced
  • 1 cup frozen peas
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add the onion and garlic to the pot and sauté until softened, about 3 minutes.
  3. Pour in the beef broth and diced tomatoes. Stir to combine.
  4. Add the potatoes, carrots, thyme, oregano, salt, and pepper. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 20 minutes or until vegetables are tender.
  6. Stir in the frozen peas and cook for an additional 5 minutes.
  7. Adjust seasonings if needed and serve hot.
