A hearty and comforting soup made with ham, white beans, vegetables, and herbs.
Ingredients

- 1 ham bone or 2 cups diced ham
- 2 cups dried white beans, soaked overnight
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 6 cups chicken broth
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Step 1: In a large pot, heat oil over medium heat and sauté onion, carrots, celery, and garlic until softened.
- Step 2: Add the ham bone or diced ham and soaked white beans to the pot.
- Step 3: Pour in the chicken broth and add thyme, salt, and pepper.
- Step 4: Bring to a boil, then reduce heat and simmer for 1-2 hours until beans are tender.
- Step 5: Remove ham bone if used, shred any meat, and return to the soup. Adjust seasoning and serve hot.
Notes
For a thicker soup, mash some beans against the side of the pot. Store leftovers in the refrigerator for up to 3 days.
