For the Crust:

- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- For the Strawberry Salsa:
- 1 1/2 cups fresh strawberries, diced
- 1/2 cup red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1 tablespoon honey
- 1/4 teaspoon salt
Instructions
1. Prepare the Crust:
- 1. Preheat grill to medium-high heat (about 400°F).
- 2. In a small bowl, mix olive oil, salt, pepper, garlic powder, and smoked paprika. Rub mixture evenly over chicken breasts.
- 3. Grill chicken for 6-7 minutes per side, or until internal temperature reaches 165°F. Remove from heat and let rest for 5 minutes.
- 4. While chicken cooks, prepare salsa: In a medium bowl, combine strawberries, red onion, jalapeño, cilantro, lime juice, honey, and salt. Stir gently to mix.
- 5. Serve grilled chicken topped with strawberry salsa. Garnish with extra cilantro if desired.
Notes
For best results, let the salsa sit for 15-20 minutes before serving to allow flavors to meld. If strawberries are very sweet, reduce honey slightly. Chicken can also be cooked on a stovetop grill pan.
