For the Crust:

  • 1.5 lbs boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups cooked brown rice
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup kalamata olives
  • 1/2 cup crumbled feta cheese
  • 1/2 cup tzatziki sauce

Instructions

1. Prepare the Crust:

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken thighs and marinate for at least 30 minutes.
  2. Grill or pan-sear chicken over medium-high heat for 6-8 minutes per side until cooked through. Let rest for 5 minutes, then slice.
  3. Assemble bowls by dividing rice among four bowls. Top with sliced chicken, cucumber, tomatoes, red onion, olives, and feta cheese.
  4. Drizzle with tzatziki sauce before serving.
