For the Crust:
- 1.5 lbs boneless, skinless chicken thighs
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups cooked brown rice
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup kalamata olives
- 1/2 cup crumbled feta cheese
- 1/2 cup tzatziki sauce
Instructions
1. Prepare the Crust:
- In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken thighs and marinate for at least 30 minutes.
- Grill or pan-sear chicken over medium-high heat for 6-8 minutes per side until cooked through. Let rest for 5 minutes, then slice.
- Assemble bowls by dividing rice among four bowls. Top with sliced chicken, cucumber, tomatoes, red onion, olives, and feta cheese.
- Drizzle with tzatziki sauce before serving.
