- 1 pound ground beef
- 2 cups orzo pasta
- 1 can (14 oz) diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 2 cups beef broth
- 1 cup feta cheese, crumbled
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, brown the ground beef over medium heat until no longer pink; drain excess fat.
- Add the chopped onion and garlic to the skillet and cook until softened, about 5 minutes.
- Stir in the diced tomatoes, oregano, cinnamon, cumin, salt, and pepper. Simmer for 10 minutes.
- Add the orzo and beef broth to the skillet, stirring to combine. Bring to a boil.
- Transfer the mixture to a baking dish and cover with foil. Bake in the preheated oven for 20-25 minutes, or until the orzo is tender.
- Remove from the oven and sprinkle with feta cheese and fresh parsley before serving.
Notes
For a vegetarian version, substitute the ground beef with lentils or mushrooms. Ensure the orzo is al dente for the best texture.
