Description

Crispy on the outside and gooey on the inside, these puffs are made from leftover mashed potatoes mixed with cheese and baked to perfection.


Ingredients

  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup all-purpose flour
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 2 tablespoons chopped chives

Instructions

  1. In a large bowl, combine mashed potatoes, shredded cheese, flour, egg, garlic powder, salt, and black pepper. Mix until well combined.
  2. If using, stir in chopped chives.
  3. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Scoop about 1-2 tablespoons of the mixture and form into balls, then place on the baking sheet.
  5. Bake for 20-25 minutes or until golden brown and crispy.
  6. Let cool slightly before serving.

Notes

For extra gooeyness, use a mix of cheeses like cheddar and mozzarella. Ensure potatoes are at room temperature for easier mixing.
