Crispy on the outside and gooey on the inside, these puffs are made from leftover mashed potatoes mixed with cheese and baked to perfection.

- 2 cups leftover mashed potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup all-purpose flour
- 1 large egg
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 2 tablespoons chopped chives
Instructions
- In a large bowl, combine mashed potatoes, shredded cheese, flour, egg, garlic powder, salt, and black pepper. Mix until well combined.
- If using, stir in chopped chives.
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Scoop about 1-2 tablespoons of the mixture and form into balls, then place on the baking sheet.
- Bake for 20-25 minutes or until golden brown and crispy.
- Let cool slightly before serving.
Notes
For extra gooeyness, use a mix of cheeses like cheddar and mozzarella. Ensure potatoes are at room temperature for easier mixing.
