- 1 lb chicken breast, cut into bite-sized pieces
- 1 cup shredded coconut
- 2 eggs, beaten
- 1/2 cup all-purpose flour
- Salt and pepper, to taste
- For Bang Bang Sauce:
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tablespoon sriracha
- 1 tablespoon honey
- 1 teaspoon garlic powder
- Juice of 1 lime
Instructions
- Preheat oil in a deep fryer or heavy pot to 350°F.
- Season chicken pieces with salt and pepper.
- Dredge chicken in flour, then dip in beaten eggs, and coat with shredded coconut.
- Fry chicken in batches until golden and cooked through, about 5-7 minutes.
- For Bang Bang Sauce: Whisk together mayonnaise, sweet chili sauce, sriracha, honey, garlic powder, and lime juice.
- Toss fried chicken in the Bang Bang sauce and serve hot.
Notes
Serve with rice or veggies for a complete meal. Adjust spice level by adding more or less sriracha.
