- 1 package (2 pounds) frozen hash brown potatoes, thawed
- 1 can (10.5 ounces) condensed cream of chicken soup
- 2 cups sour cream
- 2 cups shredded cheddar cheese
- 1/2 cup melted butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups crushed cornflakes
- 1/4 cup melted butter for topping
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking dish.
- In a large bowl, mix together the hash browns, cream of chicken soup, sour cream, cheddar cheese, 1/2 cup melted butter, salt, and pepper.
- Spread the mixture evenly into the prepared baking dish.
- In a medium bowl, mix together the crushed cornflakes and 1/4 cup melted butter. Sprinkle this over the potato mixture.
- Bake for 45 to 60 minutes, or until the top is golden and the casserole is bubbly.
Notes
This dish can be prepared ahead and refrigerated overnight before baking. It’s a great make-ahead option for potlucks.
