Description

A comforting casserole dish made with hash browns, cheese, and a creamy sauce, often served at gatherings.


Ingredients

  • 1 package (2 pounds) frozen hash brown potatoes, thawed
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 2 cups sour cream
  • 2 cups shredded cheddar cheese
  • 1/2 cup melted butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups crushed cornflakes
  • 1/4 cup melted butter for topping

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking dish.
  2. In a large bowl, mix together the hash browns, cream of chicken soup, sour cream, cheddar cheese, 1/2 cup melted butter, salt, and pepper.
  3. Spread the mixture evenly into the prepared baking dish.
  4. In a medium bowl, mix together the crushed cornflakes and 1/4 cup melted butter. Sprinkle this over the potato mixture.
  5. Bake for 45 to 60 minutes, or until the top is golden and the casserole is bubbly.

Notes

This dish can be prepared ahead and refrigerated overnight before baking. It’s a great make-ahead option for potlucks.
