For the Crust:

  • For the yogurt base:
  • 2 cups Greek yogurt (plain or vanilla)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • For the toppings:
  • 1 cup fresh strawberries, diced
  • 2 kiwis, peeled and diced
  • 1 tablespoon chia seeds (optional)
  • 1 tablespoon shredded coconut (optional)

Instructions

1. Prepare the Crust:

  1. 1. Line a baking sheet with parchment paper.
  2. 2. In a medium bowl, mix yogurt, honey/maple syrup, and vanilla extract until smooth.
  3. 3. Pour the yogurt mixture onto the prepared baking sheet, spreading it evenly to about 1/4-inch thickness.
  4. 4. Sprinkle diced strawberries, kiwi, chia seeds, and coconut evenly over the yogurt.
  5. 5. Freeze for at least 4 hours or until completely firm.
  6. 6. Once frozen, break into pieces or cut into squares.
  7. 7. Serve immediately or store in an airtight container in the freezer for up to 2 weeks.

Notes

For a dairy-free version, use coconut yogurt. Adjust sweetness to taste by adding more or less honey. Add other fruits like blueberries or mango for variation.
