For the Crust:

  • For the yogurt base:
  • 2 cups plain Greek yogurt
  • 3 tablespoons honey
  • 1 teaspoon vanilla extract
  • For the toppings:
  • 1 cup fresh raspberries (lightly mashed)
  • 1/2 cup granola
  • 2 tablespoons chia seeds
  • 1 tablespoon lemon zest (optional)

Instructions

1. Prepare the Crust:

  1. 1. Line a baking sheet with parchment paper and set aside.
  2. 2. In a medium bowl, whisk together yogurt, honey, and vanilla until smooth.
  3. 3. Spread the yogurt mixture evenly onto the prepared baking sheet (about 1/4 inch thick).
  4. 4. Drop spoonfuls of mashed raspberries over the yogurt and gently swirl with a knife.
  5. 5. Sprinkle evenly with granola, chia seeds, and lemon zest (if using).
  6. 6. Freeze for at least 4 hours or until completely firm.
  7. 7. Break into pieces and serve immediately, or store in an airtight container in the freezer.

Notes

For easier breaking, score the bark lightly with a knife before fully freezing. Substitute any berries or toppings of your choice. For vegan version, use coconut yogurt and maple syrup.
