Description

This recipe features tender short ribs braised in a rich onion gravy, topped with Gruyere cheese toast for a comforting French-inspired meal.


Ingredients

  • 4 pounds beef short ribs
  • 2 tablespoons olive oil
  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 4 slices of Gruyere cheese
  • 4 slices of baguette bread

Instructions

  1. Preheat oven to 325°F.
  2. Season short ribs with salt and pepper.
  3. Heat olive oil in a large oven-safe pot over medium-high heat and sear the short ribs on all sides until browned.
  4. Remove ribs and set aside. In the same pot, add onions and garlic, cooking until caramelized.
  5. Stir in beef broth, red wine, tomato paste, and thyme.
  6. Return ribs to the pot, cover, and braise in the oven for 2-3 hours until tender.
  7. For the toast: Top baguette slices with Gruyere cheese and broil until melted.
  8. Serve ribs with the onion gravy and top with cheese toast.

Notes

Ensure ribs are bone-in for extra flavor. Pair with a side of mashed potatoes.
