Description

Crispy potatoes baked with caramelized onions and a savory French onion soup flavor.


Ingredients

  • 4 large russet potatoes, washed and sliced
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 packet French onion soup mix
  • 1 cup beef broth
  • Salt and pepper to taste
  • Optional: 1 cup shredded cheese for topping

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat and sauté the sliced onions until caramelized, about 15 minutes.
  3. In a large bowl, toss the sliced potatoes with the French onion soup mix, salt, and pepper.
  4. Layer the potatoes in a baking dish, top with caramelized onions and pour beef broth over the top.
  5. Cover with foil and bake for 30 minutes.
  6. Remove the foil, add cheese if desired, and bake uncovered for another 15 minutes until golden and crispy.

Notes

For a vegetarian version, substitute beef broth with vegetable broth. Serve hot as a side dish.
