For the Chicken:
- 2 boneless, skinless chicken breasts (or thighs)
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- Juice of 1 lime
For the Street Corn Topping:
- 1 1/2 cups corn (fresh, frozen, or canned)
- 1 tbsp butter
- 1/4 cup mayonnaise
- 1/4 cup sour cream or Greek yogurt
- 1/2 tsp chili powder
- 1/4 tsp garlic powder
- 1/2 cup crumbled cotija cheese (or feta)
- 1 tbsp chopped cilantro
- Juice of 1/2 lime
For the Rice Base:
- 2 cups cooked rice (white, brown, or cilantro-lime rice)
For the Lime Crema Drizzle:
- 1/4 cup sour cream
- 1 tbsp mayonnaise
- Juice of 1/2 lime
- 1/4 tsp garlic powder
- 1 tbsp water (to thin, if needed)
Instructions
Marinate & Cook the Chicken:
- In a small bowl, mix chili powder, smoked paprika, garlic powder, cumin, salt, and black pepper.
- Rub the seasoning evenly over the chicken and drizzle with lime juice.
- Heat olive oil in a skillet over medium heat and cook the chicken for 5-6 minutes per side until golden and cooked through (internal temp 165°F).
- Transfer to a plate and let rest for 5 minutes, then slice or dice.
Prepare the Street Corn Topping:
- In a skillet, melt butter over medium-high heat.
- Add corn and cook for 3-4 minutes, stirring occasionally until slightly charred.
- Transfer to a bowl and mix in mayonnaise, sour cream, chili powder, garlic powder, cotija cheese, cilantro, and lime juice. Stir well.
Make the Lime Crema:
- In a small bowl, whisk together sour cream, mayonnaise, lime juice, garlic powder, and water until smooth and slightly runny.
Season the Rice:
- Stir lime juice, chopped cilantro, and salt into warm cooked rice for extra flavor.
Assemble the Bowls:
- Divide the seasoned rice between serving bowls.
- Top with sliced chicken and a generous scoop of the street corn mixture.
- Drizzle with lime crema and garnish with extra cotija cheese and fresh cilantro.
