Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large apples, peeled and diced
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix the diced apples with granulated sugar and brown sugar.
  4. Add the melted butter, eggs, vanilla extract, and milk to the apple mixture and stir until combined.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just mixed.
  6. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack.

Notes

For a healthier option, substitute half the flour with whole wheat flour. Store muffins in an airtight container for up to 3 days.
