  • 1small avocado, pitted and peeled
  • 1/2 cupsour cream or plain Greek yogurt
  • 1/4 cuppickled jalapeños
  • 2 tsplemon juice
  • 3 tbspchopped fresh chives
  • 2 tbspchopped fresh dill
  • 1 tsponion powder
  • 1 tspgarlic powder
  • Kosher salt and black pepper, to taste
  • 4large tortillas (gluten-free optional)
  • 3 cupsshredded lettuce
  • 1 cupcooked quinoa
  • 12tbsp fajita seasoning
  • 1/2 cupshredded cheddar or pepper jack cheese
  • 1 cupcooked black beans
  • 1 cupgrilled or roasted corn
  • 1roasted or grilled bell pepper, sliced
  • 11.5cups grilled chicken, cubed or shredded

Instructions

  1. Prepare the Avocado Ranch by blending the avocado, sour cream or yogurt, pickled jalapeños, lemon juice, chives, dill, onion powder, and garlic powder until smooth. Season with salt and pepper to taste.
  2. Season the grilled chicken with fajita seasoning.
  3. Assemble the wraps: Spread avocado ranch on each tortilla, top with lettuce, quinoa, seasoned chicken, cheese, black beans, corn, bell pepper, and cilantro.
  4. Roll up the wraps tightly, cut in half, and serve.

Notes

For a smoky flavor, try grilling the chicken and bell peppers outdoors.Wraps can be made ahead; just store the components separately and assemble before serving.
