A quick and flavorful vegetable stir fry coated in a rich peanut sauce, perfect for a weeknight dinner.

For the Crust:
- 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas)
- 1 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1/4 cup peanut butter
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp rice vinegar
- 1/4 cup water
- 1/4 tsp red pepper flakes (optional)
- 2 green onions, sliced (for garnish)
- 1 tbsp peanuts, chopped (for garnish)
Instructions
1. Prepare the Crust:
- Heat vegetable oil in a large pan or wok over medium-high heat.
- Add minced garlic and grated ginger, sauté for 30 seconds until fragrant.
- Add mixed vegetables and stir-fry for 5-7 minutes until tender-crisp.
- In a small bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, water, and red pepper flakes (if using).
- Pour the peanut sauce over the vegetables and toss to coat evenly. Cook for another 2 minutes.
- Garnish with sliced green onions and chopped peanuts before serving.
