  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 pound cooked turkey, shredded
  • 2 sweet potatoes, peeled and cut into cubes
  • 6 cups chicken broth
  • 1 cup cooked rice
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional Garnishes
  • Chopped parsley
  • Grated Parmesan cheese

Instructions

  1. Preparation:
  2. Heat olive oil in a large pot over medium heat.
  3. Add onion, garlic, carrots, and celery to the pot and sauté until softened, about 5 minutes.
  4. Cooking the Soup:
  5. Add shredded turkey, sweet potatoes, chicken broth, and dried thyme.
  6. Bring the soup to a boil then reduce heat to low and simmer until sweet potatoes are tender, about 20 minutes.
  7. Stir in cooked rice and season with salt and pepper to taste.
