A simple and delicious casserole made with sweet potatoes.


Ingredients

  • 4 cups sweet potatoes, mashed
  • 1 cup white sugar
  • 2 eggs, beaten
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/3 stick butter, melted
  • 1 teaspoon vanilla extract
  • For the topping:
  • 1 cup brown sugar
  • 1/2 cup all-purpose flour
  • 1/3 cup butter, melted
  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 325 degrees F (165 degrees C).
  2. In a large bowl, mix together the sweet potatoes, white sugar, eggs, milk, salt, 1/3 stick of melted butter, and vanilla extract.
  3. Pour into a 9×13 inch baking dish.
  4. For the topping: In a medium bowl, mix the brown sugar, flour, 1/3 cup melted butter, and chopped pecans.
  5. Sprinkle the mixture over the sweet potato mixture.
  6. Bake for 30 minutes, or until the topping is lightly browned.

Notes

This is a family favorite; ensure potatoes are well-mashed for a smooth texture.
