For the Crust:
- 1 cup cooked green lentils
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 2 tbsp olive oil
- 1 tbsp lime juice
- 1 tsp honey
- 1/2 tsp ground cumin
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a large bowl, combine cooked lentils, diced mango, red onion, and cilantro.
- In a small bowl, whisk together olive oil, lime juice, honey, cumin, salt, and pepper.
- Pour the dressing over the lentil mixture and toss gently to combine. Serve chilled.
