For the Crust:

  • 1 cup cooked green lentils
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp honey
  • 1/2 tsp ground cumin
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine cooked lentils, diced mango, red onion, and cilantro.
  2. In a small bowl, whisk together olive oil, lime juice, honey, cumin, salt, and pepper.
  3. Pour the dressing over the lentil mixture and toss gently to combine. Serve chilled.
