For the Crust:
- 1 lb ground beef
- 1 onion, diced
- 1 packet taco seasoning
- 1 packet ranch dressing mix
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes
- 1 can tomato sauce
- 2 cups beef broth
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
Instructions
1. Prepare the Crust:
- In a large pot, brown the ground beef with the diced onion over medium heat until fully cooked.
- Drain excess fat from the beef and return to the pot.
- Add the taco seasoning, ranch dressing mix, black beans, corn, diced tomatoes, tomato sauce, and beef broth. Stir well to combine.
- Bring the soup to a boil, then reduce heat and simmer for 20 minutes, stirring occasionally.
- Serve hot, topped with shredded cheddar cheese and a dollop of sour cream.
