Sweet Potato Turkey Chili

For the Crust:

  • 1 lb lean ground turkey
  • 1 large sweet potato, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 2 cups low-sodium chicken broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, and bell pepper; sauté until softened, about 5 minutes.
  2. Add ground turkey and cook until browned, breaking it up with a spoon. Stir in chili powder, cumin, paprika, salt, and pepper.
  3. Add sweet potato, black beans, kidney beans, diced tomatoes, and chicken broth. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 20-25 minutes, until sweet potatoes are tender. Serve hot.

You can customize the seasonings to taste.
