Delicious bite-sized strawberry cheesecake treats with a crunchy graham cracker base.

For the Crust:

  • 1 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup diced fresh strawberries
  • 1/2 cup whipped cream
  • 1/4 cup crushed graham crackers for topping

Instructions

1. Prepare the Crust:

  1. Mix graham cracker crumbs with melted butter and press into mini muffin tins to form the base.
  2. In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  3. Fold in diced strawberries and whipped cream, then spoon mixture over the crusts. Top with crushed graham crackers and refrigerate for at least 2 hours before serving.
