Spinach Pies

Flaky pastry pockets filled with a savory spinach and feta cheese mixture, perfect as an appetizer or snack.

For the Crust:

  • 1 package frozen puff pastry, thawed
  • 10 oz fresh spinach, chopped
  • 1 cup crumbled feta cheese
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 egg, beaten (for egg wash)
  • 1 tsp dried dill
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Heat olive oil in a pan over medium heat. Sauté onion until translucent, add garlic and cook for 1 minute. Add spinach and cook until wilted. Remove from heat and let cool.
  3. In a bowl, combine cooled spinach mixture, feta cheese, dill, salt, and pepper. Mix well.
  4. Roll out puff pastry and cut into squares. Place a spoonful of filling in the center of each square. Fold over to form triangles and seal edges with a fork.
  5. Brush each pie with egg wash. Bake for 20-25 minutes until golden brown. Serve warm.

Notes

You can customize the seasonings to taste.
