Flaky pastry pockets filled with a savory spinach and feta cheese mixture, perfect as an appetizer or snack.

For the Crust:
- 1 package frozen puff pastry, thawed
- 10 oz fresh spinach, chopped
- 1 cup crumbled feta cheese
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 egg, beaten (for egg wash)
- 1 tsp dried dill
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Heat olive oil in a pan over medium heat. Sauté onion until translucent, add garlic and cook for 1 minute. Add spinach and cook until wilted. Remove from heat and let cool.
- In a bowl, combine cooled spinach mixture, feta cheese, dill, salt, and pepper. Mix well.
- Roll out puff pastry and cut into squares. Place a spoonful of filling in the center of each square. Fold over to form triangles and seal edges with a fork.
- Brush each pie with egg wash. Bake for 20-25 minutes until golden brown. Serve warm.
