For the Crust:
- 1 lb large shrimp, peeled and deveined
- 2 bell peppers, sliced (any color)
- 1 large onion, sliced
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 8 small flour tortillas
- Fresh cilantro and lime wedges for serving
Instructions
1. Prepare the Crust:
- In a bowl, toss shrimp with chili powder, cumin, garlic powder, paprika, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add bell peppers and onion, sauté for 5-7 minutes until softened.
- Push vegetables to one side of the skillet and add shrimp. Cook for 2-3 minutes per side until pink and opaque.
- Mix shrimp and vegetables together and cook for another minute.
- Warm tortillas according to package instructions.
- Serve shrimp and vegetable mixture on tortillas, garnished with fresh cilantro and lime wedges.
