For the Crust:
- 4 boneless, skinless chicken breasts
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 3 tablespoons olive oil
- 3 tablespoons balsamic vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper.
- In a large bowl, whisk together olive oil, balsamic vinegar, garlic, oregano, salt, and pepper.
- Add chicken and vegetables to the bowl and toss to coat evenly with the marinade.
- Arrange chicken and vegetables in a single layer on the prepared sheet pan.
- Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
