For the Crust:

  • 4 boneless, skinless chicken breasts
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 3 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper.
  2. In a large bowl, whisk together olive oil, balsamic vinegar, garlic, oregano, salt, and pepper.
  3. Add chicken and vegetables to the bowl and toss to coat evenly with the marinade.
  4. Arrange chicken and vegetables in a single layer on the prepared sheet pan.
  5. Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
