A delicious and easy-to-make quiche using tortillas as the crust, filled with eggs, cheese, and savory vegetables.

For the Crust:

  • 4 large eggs
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/2 cup diced cooked ham
  • 2 large flour tortillas
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Lightly grease a pie dish with olive oil.
  2. Place one tortilla in the pie dish, pressing it to form the base. Layer the second tortilla on top, slightly overlapping the edges.
  3. In a bowl, whisk together eggs, milk, salt, pepper, and garlic powder.
  4. Sprinkle half of the cheese over the tortilla crust. Add diced bell peppers, onions, and ham evenly over the cheese.
  5. Pour the egg mixture over the vegetables and ham. Top with the remaining cheese.
  6. Bake for 30 minutes or until the eggs are set and the top is golden brown.
  7. Let cool for 5 minutes before slicing and serving.

You can customize the seasonings to taste.
