For the Crust:
- 4 large eggs
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1/2 cup diced cooked ham
- 2 large flour tortillas
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Lightly grease a pie dish with olive oil.
- Place one tortilla in the pie dish, pressing it to form the base. Layer the second tortilla on top, slightly overlapping the edges.
- In a bowl, whisk together eggs, milk, salt, pepper, and garlic powder.
- Sprinkle half of the cheese over the tortilla crust. Add diced bell peppers, onions, and ham evenly over the cheese.
- Pour the egg mixture over the vegetables and ham. Top with the remaining cheese.
- Bake for 30 minutes or until the eggs are set and the top is golden brown.
- Let cool for 5 minutes before slicing and serving.
