Salmon Spinach Pasta

A quick and nutritious pasta dish featuring flaked salmon and fresh spinach in a creamy garlic sauce.

For the Crust:

  • 12 oz pasta (such as penne or fettuccine)
  • 2 salmon fillets (about 1 lb total), skin removed
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 4 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 1 tsp lemon juice
  • Salt and black pepper to taste
  • Fresh dill for garnish (optional)

Instructions

1. Prepare the Crust:

  1. Cook pasta according to package directions until al dente. Drain and set aside.
  2. Season salmon fillets with salt and pepper. Heat olive oil in a large skillet over medium heat. Cook salmon for 4-5 minutes per side until flaky. Remove from skillet and flake into chunks.
  3. In the same skillet, add garlic and sauté for 1 minute until fragrant. Pour in heavy cream and bring to a simmer.
  4. Add spinach and cook until wilted, about 2 minutes. Stir in Parmesan cheese and lemon juice until smooth.
  5. Add cooked pasta and flaked salmon to the skillet. Toss to coat evenly with the sauce. Season with additional salt and pepper if needed.
  6. Garnish with fresh dill and serve immediately.

Notes

You can customize the seasonings to taste.
