Rolled Chicken with Feta and Spinach

Tender chicken breasts stuffed with creamy feta and fresh spinach, rolled and baked to perfection.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Toothpicks for securing

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Pound chicken breasts to 1/4-inch thickness.
  2. In a bowl, mix spinach, feta, garlic, oregano, salt, and pepper.
  3. Spread mixture evenly over each chicken breast, then roll tightly and secure with toothpicks.
  4. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken rolls on all sides until golden.
  5. Transfer skillet to oven and bake for 20-25 minutes, until chicken is cooked through.
  6. Rest for 5 minutes before slicing and serving.
