For the Crust:
- 8 oz penne pasta
- 2 cups cherry tomatoes, halved
- 1 zucchini, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, sliced
- 3 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup crumbled feta cheese
- 2 tbsp fresh basil, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C).
- Toss cherry tomatoes, zucchini, bell peppers, and red onion with olive oil, garlic powder, oregano, salt, and black pepper on a baking sheet.
- Roast vegetables for 25-30 minutes, stirring halfway, until tender and slightly caramelized.
- Meanwhile, cook pasta according to package instructions. Drain and set aside.
- Combine roasted vegetables with cooked pasta. Top with crumbled feta cheese and fresh basil before serving.
