For the Crust:

  • 2 large sweet potatoes, peeled and cubed
  • 4 large carrots, peeled and sliced
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine sweet potatoes, carrots, olive oil, garlic powder, smoked paprika, thyme, salt, and pepper. Toss until evenly coated.
  3. Spread the vegetables in a single layer on the prepared baking sheet.
  4. Roast for 25-30 minutes, stirring halfway, until tender and lightly browned.
  5. Garnish with fresh parsley if desired and serve warm.

Notes

You can customize the seasonings to taste.
