For the Crust:
- 2 large sweet potatoes, peeled and cubed
- 4 large carrots, peeled and sliced
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine sweet potatoes, carrots, olive oil, garlic powder, smoked paprika, thyme, salt, and pepper. Toss until evenly coated.
- Spread the vegetables in a single layer on the prepared baking sheet.
- Roast for 25-30 minutes, stirring halfway, until tender and lightly browned.
- Garnish with fresh parsley if desired and serve warm.
