- 1 pound carrots, peeled and sliced into 1/2-inch pieces
- 2 tablespoons brown sugar
- 1 tablespoon unsalted butter, melted
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the sliced carrots with melted butter, brown sugar, salt, pepper, and olive oil until evenly coated.
- Spread the carrots evenly on a baking sheet.
- Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the carrots are tender and caramelized.
- Remove from the oven and serve immediately.
Notes
For a healthier version, substitute butter with coconut oil. These carrots pair well with roasted meats.
