A simple and delicious side dish where carrots are roasted with brown sugar for a sweet and caramelized flavor.


Ingredients

  • 1 pound carrots, peeled and sliced into 1/2-inch pieces
  • 2 tablespoons brown sugar
  • 1 tablespoon unsalted butter, melted
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the sliced carrots with melted butter, brown sugar, salt, pepper, and olive oil until evenly coated.
  3. Spread the carrots evenly on a baking sheet.
  4. Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the carrots are tender and caramelized.

Notes

For a healthier version, substitute butter with coconut oil. These carrots pair well with roasted meats.
