For the Crust:
- 1 cup rolled oats
- 1/2 cup pumpkin puree
- 1/2 cup almond butter
- 1/4 cup honey
- 1 scoop vanilla protein powder
- 1 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 1/4 cup mini chocolate chips
Instructions
1. Prepare the Crust:
- In a large bowl, mix together oats, pumpkin puree, almond butter, and honey until well combined.
- Add protein powder, pumpkin pie spice, and cinnamon. Mix until fully incorporated.
- Fold in mini chocolate chips.
- Roll mixture into 1-inch balls and place on a parchment-lined tray.
- Refrigerate for at least 30 minutes before serving.
