For the Crust:

  • 1 cup rolled oats
  • 1/2 cup pumpkin puree
  • 1/2 cup almond butter
  • 1/4 cup honey
  • 1 scoop vanilla protein powder
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/4 cup mini chocolate chips

Instructions

1. Prepare the Crust:

  1. In a large bowl, mix together oats, pumpkin puree, almond butter, and honey until well combined.
  2. Add protein powder, pumpkin pie spice, and cinnamon. Mix until fully incorporated.
  3. Fold in mini chocolate chips.
  4. Roll mixture into 1-inch balls and place on a parchment-lined tray.
  5. Refrigerate for at least 30 minutes before serving.

You can customize the seasonings to taste.
