For the Crust:
- 1/2 cup rolled oats
- 1/2 cup milk of choice
- 1/4 cup pumpkin puree
- 1 tbsp maple syrup
- 1/2 tsp pumpkin pie spice
- Pinch of salt
- 1 tbsp chia seeds
- 1/4 tsp vanilla extract
Instructions
1. Prepare the Crust:
- In a jar or bowl, combine all ingredients and stir well until fully mixed.
- Cover and refrigerate for at least 4 hours, or overnight.
- Stir before serving. Add a splash of milk if desired, and top with nuts or whipped cream.
