  • 1 cup rolled oats
  • 1/2 cup pumpkin puree
  • 1/4 cup almond butter
  • 2 tbsp maple syrup
  • 1 tsp pumpkin pie spice
  • 1/4 cup chopped pecans
  • 1/4 cup shredded coconut

Instructions

1. Prepare the Crust:

  1. In a large bowl, mix together the rolled oats, pumpkin puree, almond butter, and maple syrup until well combined.
  2. Add the pumpkin pie spice, chopped pecans, and shredded coconut. Stir until evenly distributed.
  3. Roll the mixture into 1-inch balls and place them on a parchment-lined tray. Refrigerate for at least 30 minutes before serving.
