For the Crust:
- 1 cup rolled oats
- 1/2 cup pumpkin puree
- 1/4 cup almond butter
- 2 tbsp maple syrup
- 1 tsp pumpkin pie spice
- 1/4 cup chopped pecans
- 1/4 cup shredded coconut
Instructions
1. Prepare the Crust:
- In a large bowl, mix together the rolled oats, pumpkin puree, almond butter, and maple syrup until well combined.
- Add the pumpkin pie spice, chopped pecans, and shredded coconut. Stir until evenly distributed.
- Roll the mixture into 1-inch balls and place them on a parchment-lined tray. Refrigerate for at least 30 minutes before serving.
