Description

Delicious spiced cupcakes with all the flavor of pumpkin pie in a portable, festive form.


Ingredients

  • 1 cup canned pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • Whipped cream for topping

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together pumpkin puree, sugars, eggs, oil, and vanilla until smooth.
  3. In another bowl, combine flour, baking powder, baking soda, spices, and salt.
  4. Gradually mix dry ingredients into wet ingredients until just combined.
  5. Divide batter evenly among cupcake liners, filling each about 2/3 full.
  6. Bake for 18-22 minutes or until a toothpick inserted comes out clean.
  7. Cool completely before topping with whipped cream.
