For the Crust:

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/4 teaspoon salt
  • 1 cup pumpkin puree
  • 1/3 cup maple syrup
  • 2 eggs
  • 1 1/2 cups milk
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F and grease an 8×8 baking dish.
  2. In a large bowl, mix oats, baking powder, cinnamon, nutmeg, cloves, and salt.
  3. In another bowl, whisk together pumpkin puree, maple syrup, eggs, milk, and vanilla.
  4. Pour wet ingredients into dry ingredients and stir until combined. Fold in pecans.
  5. Transfer mixture to prepared baking dish and bake for 30-35 minutes until set and golden.
