For the Crust:
- 1 cup farro, rinsed
- 1 lb Italian sausage, casings removed
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 2 cups chicken broth
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, breaking it into small pieces with a spoon.
- Add the diced onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- Add the farro, diced tomatoes (with juices), chicken broth, oregano, red pepper flakes, salt, and pepper. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 25-30 minutes, or until the farro is tender and most of the liquid is absorbed.
- Stir in the grated Parmesan cheese. Taste and adjust seasoning if needed.
- Garnish with fresh basil before serving.
