For the Crust:

  • 1 cup farro, rinsed
  • 1 lb Italian sausage, casings removed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, breaking it into small pieces with a spoon.
  2. Add the diced onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the farro, diced tomatoes (with juices), chicken broth, oregano, red pepper flakes, salt, and pepper. Stir to combine.
  4. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 25-30 minutes, or until the farro is tender and most of the liquid is absorbed.
  5. Stir in the grated Parmesan cheese. Taste and adjust seasoning if needed.
  6. Garnish with fresh basil before serving.
