One Pot Chicken and Mushroom Orzo

For the Crust:

  • 1 lb boneless, skinless chicken thighs, cubed
  • 8 oz cremini mushrooms, sliced
  • 1 cup orzo pasta
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and thyme, then brown for 5-6 minutes. Remove and set aside.
  2. In the same skillet, add onions and mushrooms. Cook until softened, about 5 minutes. Add garlic and cook for 1 minute until fragrant.
  3. Stir in orzo, then pour in chicken broth. Bring to a boil, reduce heat to low, cover, and simmer for 10 minutes.
  4. Return chicken to the skillet. Stir in heavy cream and Parmesan cheese. Cook for another 5 minutes until creamy and heated through. Garnish with parsley before serving.
