For the Crust:
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup milk
- 1/4 cup unsalted butter
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 1/2 cups quick-cooking oats
- 1 cup chopped pecans
- 1/2 cup shredded coconut
Instructions
1. Prepare the Crust:
- In a medium saucepan, combine granulated sugar, brown sugar, milk, butter, and salt. Bring to a boil over medium heat, stirring constantly.
- Boil for 1 minute, then remove from heat and stir in vanilla extract.
- Quickly stir in oats, pecans, and shredded coconut until well combined.
- Drop by tablespoonfuls onto wax paper or parchment paper and let cool until set, about 30 minutes.
