No-Bake Cream Cheese Peanut Butter Pie

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups heavy whipping cream
  • 1/4 cup chopped peanuts (optional, for garnish)

Instructions

1. Prepare the Crust:

  1. In a medium bowl, mix graham cracker crumbs, granulated sugar, and melted butter until combined. Press firmly into the bottom and up the sides of a 9-inch pie dish. Chill in the refrigerator for 30 minutes.
  2. In a large bowl, beat the cream cheese, peanut butter, powdered sugar, and vanilla extract until smooth and creamy.
  3. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the peanut butter mixture until fully incorporated.
  4. Pour the filling into the chilled crust and smooth the top with a spatula. Refrigerate for at least 4 hours or overnight.
  5. Garnish with chopped peanuts before serving if desired.
