Mexican Shredded Chicken

Tender, flavorful shredded chicken perfect for tacos, burritos, bowls, and more. Easy to make in one pot with authentic Mexican spices.

For the Crust:

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 jalapeño, seeded and minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional)
  • Salt and pepper to taste
  • 2 tbsp lime juice
  • 1/4 cup fresh cilantro, chopped

Instructions

1. Prepare the Crust:

  1. Combine chicken, broth, onion, garlic, jalapeño, and all spices in a large pot. Bring to a boil.
  2. Reduce heat to low, cover, and simmer for 20-25 minutes until chicken is cooked through and tender.
  3. Remove chicken from pot and shred using two forks. Return shredded chicken to the pot.
  4. Stir in lime juice and cilantro. Cook uncovered for 5-10 minutes until liquid reduces slightly. Serve warm.

You can customize the seasonings to taste.
