For the Crust:
- 4 large russet potatoes
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded cheddar cheese
- 6 slices cooked bacon, crumbled
- 1/4 cup sour cream
- 2 green onions, sliced
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Grease a muffin tin.
- Slice potatoes into thin rounds. Toss with olive oil, salt, and pepper.
- Press potato slices into muffin cups, overlapping to form a cup shape.
- Bake for 25-30 minutes until golden and crispy.
- Remove from oven and fill each cup with cheese and bacon. Return to oven for 3-5 minutes until cheese melts.
- Top with sour cream and green onions before serving.

You can customize the seasonings to taste.
